Here is a yummy Gl-Airy Free Pumpkin Pie and just in time for Autumn! I love everything pumpkin!

PIE SHELL

2 c. almond flour
1/2 c. coconut oil, melted
2 T. coconut milk
2 T. honey

INSTRUCTIONS FOR PIE SHELL:

Using a rubber spatula, mix all ingredients for the shell just until combined. Press the dough into the bottom and sides of a 9″or 10″ pie plate. Create fluted edges with fingers if you would like.

To make your own pumpkin pie spices stir or whisk together:

1 tablespoon ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon allspice
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg

You can store in an air tight container for up to one year.

INGREDIENTS FOR PIE FILLING:

  • 1¾ cups organic pumpkin
  • ¾ cup organic palm coconut sugar
  • 2 eggs
  • ¾ cup almond milk
  • ½ teaspoon vanilla
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1½ teaspoons pumpkin pie spice (see recipe above)

INSTRUCTIONS:

Mix all filling ingredients with a fork and add to unbaked pie shell. If using a 9″ shell, bake a little longer. Bake on 400 degrees for about 50-55 minutes. After half an hour, cover the crust with foil so it doesn’t burn. Cool before serving. Add some dairy free topping of your choice!
